IF WE’RE BEING HONEST with ourselves, “candymaker” would be in the top five of most anyone’s What-I-Would-Do-If-I-Could-Do-Anything list. Being surrounded daily by chocolate, caramel, and every other imaginable form of sugar? And getting paid for it? The only thing that might sound better is…well, probably nothing.

Still, the work of the three local candymakers profiled on these pages is not all marshmallows and gumdrops. Indeed, it is hard work, requiring tremendous skill, long hours, and at times physical strength. It calls for the candymaker to wear the hat of chemist, businessperson, sometimes even inventor. And it also demands an understanding of how flavors play off of one another. They do have one thing going for them, though: Nothing is easier to be sweet on than candy.
